This Spring Mix Strawberry Salad with Honey Vinaigrette is a fresh, easy, and delicious way to use seasonal ingredients from the Thomasville Farmers Market—like local strawberries, greens, onions, honey, and cheese. It's perfect for a light lunch or as a side dish for spring gatherings!

Spring Mix Strawberry Salad with Honey Vinaigrette

Ingredients

For the Salad:

  • Spring mix salad greens

  • Fresh strawberries, hulled and sliced

  • Crumbled feta or goat cheese

  • Thinly sliced red onion

For the Honey Vinaigrette:

  • 1/4 cup extra virgin olive oil

  • 1/4 cup red wine vinegar (or adjusted to taste)

  • 2 Tbsp honey

  • 2 tsp Dijon mustard

  • 1/2 tsp salt (or to taste)

  • 1/4 tsp black pepper (or to taste)

Instructions:

  1. In a mason jar or measuring cup, whisk together the vinaigrette ingredients until well combined.

  2. In a large serving bowl, layer spring mix, strawberries, red onion, and crumbled cheese.

  3. Just before serving, drizzle the honey vinaigrette over the salad and gently toss to coat.
