This Saturday, we’re celebrating "Food as Medicine" with amazing vendors, live music, cooking demos, and a seasonal recipe you can make with ingredients straight from the market.

Fall brings an incredible harvest of winter squash, leafy greens, apples, sweet potatoes, peppers, and more — all packed with antioxidants, fiber, and immune-boosting compounds that support your health from the inside out.

Recipe of the Week – Creamy Roasted Winter Squash Soup

This recipe uses some ingredients you may find at the market — winter squash, onions, garlic, and fresh herbs — plus bone broth you can learn to make from PiedmontFresh’s demo if you want to make it extra nourishing.

Ingredients (Serves 4):

  • 2 medium winter squash (butternut or acorn), peeled and cubed

  • 1 tablespoon olive oil

  • 1 medium onion, chopped

  • 3 cloves garlic, minced

  • 4 cups bone broth (or vegetable broth)

  • 1 teaspoon fresh thyme (or ½ teaspoon dried)

  • Salt and pepper to taste

  • Optional garnish: roasted pumpkin seeds, Greek yogurt, or fresh parsley

Directions:

  1. Preheat oven to 400°F. Toss squash cubes in olive oil, salt, and pepper. Roast for 25-30 minutes until tender and slightly caramelized.

  2. In a large pot, sauté onions and garlic until soft and fragrant.

  3. Add roasted squash, broth, and thyme. Simmer for 10 minutes.

  4. Using an immersion blender (or a regular blender in batches), puree until smooth and creamy.

  5. Taste, season, and serve hot — topped with your favorite garnish.

This soup is rich in vitamin A, vitamin C, fiber, and anti-inflammatory compounds. Pair it with crusty bread from one of our local bakers for a cozy fall meal.

🌈 Eat the Rainbow Program – Through September 20!

We’re thrilled to see so many families participating in our Eat the Rainbow program this season! This fun and educational initiative encourages kids to try a variety of colorful, fresh fruits and vegetables each week.

Teaching kids to eat fresh and healthy early sets the stage for lifelong healthy habits and overall good health as they grow into adulthood. There’s still time to join in — the program runs until the end of the season on September 20.

Don’t forget to bring the kids by this Saturday to grab their free Rainbow Bucks so they can buy fresh produce all on their own!
